Meet the National DiGiTiTiON Champions!

There can only be one first-place in a competition, but there can be multiple winners. Over the past few months we’ve worked with over 100 people to make the DiGiTiTiON a reality. Super Volunteers packed competition kits, wrote [and re-wrote] scoresheets and rules & regulations, and helped guide judges, competitors, and mentors through this beautiful competition.

Instructors and mentors called on their skills as competitors or champions and industry leaders to guide 36 DiGiCats in ways that extend far beyond extraction theory or how to balance a cocktail.

Sponsors generously gave product, time, and finances to equip and support all of those involved, and to you sponsors, we are beyond grateful. We never could have imagined a world in which a competitor can use, and keep, a grinder or kettle or drinkwares or tamper….Thank you for fiercely supporting Glitter Cats by getting them the gear they deserve.

And mostly importantly, thank you to the 36 Finalists, The DiGiCats. You leaned into the quirkiness and intensity of the DiGiTiTiON with power, grace, and a whole lot of glitter. You asked questions, challenged rules, outright broke rules [that will remain broken for next time!], and showed us that when given a stage with no limitations of what it means to be a “professional coffee competition” we see something more beautiful than could have been imaged. We see powerful Cats making and finding community, leading this industry, and here to keep taking up space, and encouraging others to do likewise.

While there may be only one first place per competition, we see 36 winners. So without further delay….

Brewer Champion

The Reverend Neichelle Guidry, PhD

Neichelle (she/her) was the only Brewer competitor to “serve” us their coffee as she welcomed us to sit at her table and enjoy coffee the way her grandma would have, with sugar and some PET milk. Coffee brewed with hosiery [well rinsed], and careful brewing into a bedazzled mason jar, it’s a treat. This balanced with a fantastic compulsory brew recipe, this newbie to coffee knows what’s up!

Coffee+Booze Champion

Ziru Mo

If you think you’ve seen Ziru (she/they) somewhere else on this website, you're right! They were also our main video editor! Enough about work though, Ziru brought flares of professionalism by, literally, lighting her garnish on fire that was nestled into a dehydrated orange peel. They made their own Chinese New Year bitters and orgeat, and took us on a journey into their life by created a chili-mango salad paired with her Flamin’ Garden cocktail.

Taster Champion

Kat Natividad

With an impressive 8 out of 9 correct, Kat (she/they) showed us that when you train hard, it pays off. She spent two weeks smelling essential oils and tasting random fruits and foods to prepare for the syrup/aromatic tastings! Not to mention, she was one of two competitors that got all three triangulations correct! Now that is a Taster Champion.

Latte Art Champion

EC Fajardo

EC (he/him) not only poured some nearly identical corgi butts (monks heads), but he also involved his entire family into his presentation based around the Tagalog term “besita” meaning “guest”. His daughter was his “PITCHER RINSER!” and his pup Mocha made a cameo, while his wife recorded this, slightly chaotic, yet incredibly beautiful presentation. This beauty was matched by a signature pour representing the Filipino flag.

Roaster Champion

Tio Fallen

The biggest challenge for the Roasters was the need to learn and entirely new arm-powered roaster, and Tio (he/him) was up for the challenge! He branded is coffee “Color Outside the Lines” as a call back to his childhood and challenged us all to see beyond the boxes we are in, to get creative, and see what fabulousness awaits.

Barista Champion

Rebecca Lespier

With a fully defined idea of professionalism, Rebecca (she/her) is here to rock the boat and burn the table! Professionalism shouldn’t mean being loud or smiling or perfectly clean, heck, our first national barista champion dropped a cup in her presentation! What’s more is she knows how to make espresso and develop a wild, yet delicious signature beverage, with a cup dipped in Ube Syrup and rolled in flaming’ hot Cheetos, we are waiting to try it.
